Requirements
- Possess
atleast a Bachelor Degree, Post Graduate Diploma, Professional Degree in
food & beverage management services, Culinary Science or related
certificate
- Atleast
5 years working exprience in the related fields is required for this
position
- Candidates
must have good knowledge in western cuisine and fine dining food, HACCP
hygiene, safety and cleanliness of kitchen, including proper use and
maintenance of major kitchen equipment
- Experience
in an international hotel is an advantage
- Excellent
record of kitchen management

Responsibilities
- Responsible
for the smooth operation of cafeteria on day-to-day operations, including
menu development, inventory, wastage control, hygiene practice and manage
food cost control to contribute to food and beverage revenue
- Responsibile
for developing the reputation of the school's cafeteria through the
production of excellent quality food, yet it is cost effective and
efficient resulting outstanding customers satisfaction
- Manage
cafeteria operations including budgeting, forecasting, resource planning
and waste management
- Analyze
recipes to assign prices to menu item, based on food ingredient and labor
cost for management approval
- Determine
production schedule (how much food to order) and maintain an appropriate
supply and timely delivery of services
- Ensure
higers level of food quality, taste and presentation that meet an exceed
international students and staff needs that inspire and draw diners to
have a positive experience at the cafeteria
- Actively
involve in menu development keeping up with trend in creating new specialties
especially for special occasion / events
- Ensure
consistency in high quality food, meals presentation and services at all
times
- Maintain
and manage a high standard of all food preparation employing food safety
best practice in kitchen hygiene, food handling and sanitation standard in
accordance with appicable laws and regulation
- Instruct
cook and workers in the preparation, cooking, garnishing and presentation
of food
- Check
the quality of raw and cooked food product to ensure that standards are
met
- Train,
develops and motivate kitchen crew in coordinating all food related
culinary activities effectively to ensure well organized and dedicated
team
- Prevent
any damage, breakage or loss of company cafeteria property by establishing
policies and procedures, demonstrate new cooking techniques and handling
equipment to kitchen crew
- Ensure
that cafeteria's crews work schedule and disciplinaries procedures and
documentation are complited and adheres to all company policies and
procedures
- Perform
any duties and responsibilities compitently assigned from time to time by
the management
